A Sugar House in Saitama

A Sugar House in Saitama

Who knew that you could tap the sap of Japanese maples in the Chichibu hills of Saitama? The local ecology brand Tap & Sap was founded by Aiko Ihara, who was inspired by the “trees and people” initiative and the rich natural resources that were relatively unknown in her hometown of Chichibu.
In Canada, a “sugar house” is a small building where maple syrup is produced. In spring 2016, Maple Base, Japan’s first sugar house, opened within the grounds of Chichibu Muse Park. Maple Base includes a café and shop where you can enjoy various maple-based products and treats, serving as a hub for experiencing and promoting the Chichibu maple brand through all five senses. Various local ecology events and workshops are also held in the spacious grassy area surrounding the building and other parts of Chichibu Muse Park according to the seasons.

When snow melts, maple trees absorb large amounts of moisture from the ground and prepare to sprout. The precious maple sap, which can only be collected at this time, is slightly sweet and rich in natural minerals.
Visit Maple Base to enjoy a sweet dessert or drink made from pure maple, and learn about the maple syrup-making process from a passionate employee. If you’d like to learn more, Tap & Sap leads eco-tours of the local forest to explore its natural bounty.
