Shojin ryori with a gourmet twist

Opened in 2018, saido (meaning “the way of vegetables”) is a conceptual restaurant that proposes a new interpretation of food diversity in Japanese cuisine. SAIDO’s dishes are made using no animal-derived products, umami seasonings, refined sugar, or any of the Buddhist “five pungent roots” - garlic, chives, leeks, shallots, onions. These ingredients are all believed to have distracting stimulating effects on the body and mind. Presented with the meticulous care of a traditional kaiseki meal, SAIDO’s vegan cuisine will nourish both your body and soul with its fresh and wholesome plant-based ingredients.

The small restaurant is nestled in a quiet corner of Jiyugaoka, a trendy upscale neighborhood in southwest Tokyo. For lunch, SAIDO offers a combo platter featuring a main dish of your choice: noodles, rice bowl, or curry soup. Desserts and sweet herbal liqueur can be added for a complete culinary experience.
Let the chef pair your dishes with sake, kombucha, or seasonal fruit sodas, and be prepared to discover a modern and delicious vegan take on traditional Japanese cuisine.
