Opened in 2018, saido (meaning “the way of vegetables”) is a conceptual restaurant that proposes a new interpretation of food diversity in Japanese cuisine. SAIDO’s dishes are made using no animal-derived products, umami seasonings, refined sugar, or any of the Buddhist “five pungent roots” - garlic, chives, leeks, shallots, onions. These ingredients are all believed to have distracting stimulating effects on the body and mind. Presented with the meticulous care of a traditional kaiseki meal, SAIDO’s vegan cuisine will nourish both your body and soul with its fresh and wholesome plant-based ingredients.

The small restaurant is nestled in a quiet corner of Jiyugaoka, a trendy upscale neighborhood in southwest Tokyo.
